Winner Winner Fish for Dinner

Monday night's dinner was grilled mahi - yum!


Tonight's dinner was fried hamachi collar - super yum!!!


Tomorrow I might flash fry some salmon (or I might just take Marlon to Jollibee).

Fish for Dinner

Noe wanted fried pompano for her birthday - so I got her some fried pompano.  But while doing that, I saw some mahi fillets and grabbed a few.  A little salt, a little pepper, some butter to fry them in and BAM!!!


So yummy!!!

Other Photos From Sunday

After flyfishing, I drove up to the North Shore to meet up with some old family friends - the Fosters! I first met them when I arrived on Oahu for the first time back over 21 years ago. And for old times sake, we met for lunch at Kua Aina up in Haleiwa! I had only been through Wailua since I've been back and not up all the way through Haleiwa and along the North Shore itself. Somethings like Kua Aina and Hawaii Surf and Sail (the surf shop next door to Kua Aina) haven't changed. This Dakine kids rash guard was really cool. Somethings changed radically - the parking at Lani's (Laniakea Surf Break) is way different, not sure why just yet. The traffic changed too - for the worst. I didn't bother going south, just went north on Kam Hwy and kept on going. I ended up in Kaneohe to work on the paddle again - next post.

Grilled Mahi for Dinner


Late afternoon paddle at West Pier for exercise in some gnarly offshore winds - 15 with gusts past 22.

If I had a chase boat, Cat Island would have probably been less than an hour away...

Went home and grilled some mahi.

The way I do it is:

- salt and pepper to taste
- 4 chopped pieces of garlic
- 2 tsp of butter

Take a piece of foil, place the salted/peppered fish and place it skin down on the foil. Put the butter and garlic on top, wrap lightly and bring it out to a fired up grill. Cook for about 20 minutes (the butter will keep the fish moist).

The skin should just about slide off at this point.

Place on top of a bed of rice and ENJOY!!!
